These vegan berry muffins are a favorite for a few reasons. First, they are incredibly simple to make - just a quick mix in one bowl and off to the oven! In under 30 minutes, you'll have delicious, fluffy muffins ready to enjoy.

Plus, they look absolutely adorable when baked in colorful cupcake liners, making them a treat for both the eyes and the taste buds.
Whether you're short on time or just want a healthy snack, these muffins are the perfect guilt-free indulgence!

These muffins are dairy-free and egg-free, just for this occasion. I am adding the conventional ingredients in case you'd prefer the classic mixed berry muffins. So let's get down to work.
Ingredients
- half a cup of sugar
- two cups of flour
- one cup of spelt milk (you can substitute it by one cup of plain yogurt or cow milk)
- two spoonfuls of chia seeds
mixed with 6 spoonfuls of water (mix and put it aside for 10 minutes) - you can use two eggs instead - half a cup of sunflower oil
- baking powder
- optional: vanilla extract
- add a large cup of frozen berries (or other fruit of your choice) - the more, the better!

How To Make Vegan Muffins - directions:
- Throw all dry ingredients into a bowl and mix them.
- Add the liquid ingredients and whisk until well combined.
- Add the berries at the end. (Yes, THAT simple!)
Bake for 20 minutes or so at 180 Celsius (350 Fahrenheit).

Serve these muffins immediately. They come out of the oven warm, delicious, and hard to resist!
If there are any muffins left, you can store them in an airtight container in the fridge for no longer than 2 days. You can also freeze these muffins for up to 2 months. To thaw, get the muffins from the freezer and let them thaw at room temperature for several hours.
